"Asahikawa ramen" is considered one of the three major ramen in Hokkaido. Combining seafood-based soup boiled from kelp and anchovies with meat broth from pork bones and chicken, it is then flavored with soy sauce, which creates a savory soup that complements the curly noodles. To counter Hokkaido's cold weather, lard is added to form a layer of oil to prevent the ramen from cooling too quickly. In recent years, there have been original Asahikawa ramen that specializes in salty and miso flavor, and one can now enjoy many variations of ramen.
