21st Century Museum of Contemporary Art, Kanazawa
This brewery was founded in 1899. Their sake is made with subsurface water from the Oirase River that flows from Lake Towada, with water clarity among the highest in Japan. They aim to create authentic local brews, taking pride in employing local ingredients, techniques, and people. This Junmai Daiginjo is made with Aomori's "Hanaomoi," a rice ideal for sake brewing. It is milled down to 40%, then fermented at a low temperature for an extended period. Its elegant fragrance and robust flavor are well balanced, resulting in a refreshingly lush taste.
