Kagawa Prefecture is so famous for its sanuki udon noodles that it's often referred to as the Udon Prefecture. Udon restaurants began making their appearance during the early Edo Period in the region due to Kagawa's warm and dry weather - ideal for cultivating wheat - and the abundance of sardines, salt and soy sauce, which are used in the broth. We suggest you first try the standard kake udon, followed by kama-age udon, bukkake udon and kama-tama udon to gain an appreciation of the smooth, chewy and dense udon noodles. You will even see udon taxis and udon buses on the streets of Kagawa!
